Glycation is a biochemical reaction in which sugar molecules, usually glucose or fructose, bind non-enzymatically to proteins or lipids. This process leads to the formation of advanced glycation end-products (AGEs), which can hinder the function and structural integrity of essential proteins, such as collagen and elastin, within the skin. The accumulation of AGEs is associated with various signs of skin aging, including loss of elasticity, fine lines, uneven tone, and a dull complexion.

Glucose and proteins produce Schiff bases through reversible reactions. Schiff bases undergo rearrangement and cleavage to produce Amadori products. Some Amadori products are converted to AGEs, and others are oxidized and cleaved to active dicarbonyl compounds.
